Apple Cranberry Crisp

Bake Time: 50 minutes
Yield: Makes 6 to 8 servings
Ingredients:
1
cup brown sugar, divided

1
tablespoon cornstarch

1
teaspoon ground cinnamon

1/2
teaspoon ground ginger

1/4
teaspoon ground nutmeg

5
to 6 cups cubed peeled tart apples

1
cup fresh or frozen cranberries or 1/2 cup dried cranberries

1
teaspoon freshly grated orange peel

1/2
cup buttermilk baking mix

1/2
cup uncooked oats

1/2
cup coarsley chopped walnuts

1/4
teaspoon salt

1/4
cup (1/2 stick) butter

Vanilla ice cream (optional)



Preparation:
1.
Preheat oven to 350°F. Grease shallow 2-quart baking dish.

Combine 1/2 cup brown sugar, cornstarch, cinnamon, ginger and nutmeg in large bowl. Add apples, cranberries and orange peel; toss to mix well. Spoon into prepared dish.

3.
Combine baking mix, oats, nuts, remaining 1/2 cup brown sugar and salt in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Sprinkle over apple mixture.

4.
Bake 50 minutes or until apples are tender. Serve warm with ice cream.
