Apple Filled Acorn Squash with Honey Glaze
INGREDIENTS
| 1 | medium yellow onion, diced |
| 1 | medium parsnip, peeled and cut into small cubes |
| 1 | small rutabaga, peeled and cut into small cubes |
| 2 | Apples, cored and cut into small cubes |
| 4 Tbsp | butter, melted |
| 2 tsp. | fresh rosemary, finely chopped |
| Salt to taste | |
| 1 | large acorn squash (unpeeled), halved and seeded |
| 2 Tbsp | Honey |
| 1/2 cup | chopped hazelnuts |
PREPARATION:
Method
- Preheat oven to 350ºF (180ºC).
- In a large bowl, mix all vegetables and apples. Add melted butter. Season with rosemary and salt. Toss well and set aside.
- Arrange squash halves on a baking sheet lined with parchment paper. Brush with melted butter and season with salt. Scoop filling into squash halves. Bake for 30-40 minutes. Remove from oven and drizzle with honey. Bake another 15 minutes or until squash is tender. Set aside to cool for 10 minutes. Garnish with hazelnuts.
