Apple Filled Acorn Squash with Honey Glaze

INGREDIENTS

medium yellow onion, diced
medium parsnip, peeled and cut into small cubes
small rutabaga, peeled and cut into small cubes
Apples, cored and cut into small cubes
4 Tbsp butter, melted
2 tsp. fresh rosemary, finely chopped
Salt to taste
large acorn squash (unpeeled), halved and seeded
2 Tbsp Honey
1/2 cup chopped hazelnuts

PREPARATION:

Method

  1. Preheat oven to 350ºF (180ºC).
  2. In a large bowl, mix all vegetables and apples. Add melted butter. Season with rosemary and salt. Toss well and set aside.
  3. Arrange squash halves on a baking sheet lined with parchment paper. Brush with melted butter and season with salt. Scoop filling into squash halves. Bake for 30-40 minutes. Remove from oven and drizzle with honey. Bake another 15 minutes or until squash is tender. Set aside to cool for 10 minutes. Garnish with hazelnuts.
