Yield: Makes 2 servings
Ingredients:
2
small Granny Smith apples

1/3
cup liquid egg whites

2
tablespoons bacon bits

1/4
teaspoon ground cinnamon

1/2
teaspoon sugar substitute

4
frozen pancakes

4
teaspoons sugar-free maple syrup



Preparation:
1.
Peel, core and chop apples (yields about 1 cup). Mix apples, egg whites, bacon bits, cinnamon and sugar substitute in small bowl.

2.
Place 2 frozen pancakes in small microwave-safe dish and top each evenly with apple mixture. Microwave on HIGH 3 minutes.

3.
Drizzle each with 2 teaspoons of maple syrup, top with remaining pancakes and microwave on HIGH 2 more minutes.

4.
Serve warm or let cool to pick up like a sandwich.


Note: To reduce sodium and increase fiber, make your own pancakes from a multigrain pancake mix ahead of time and freeze them between layers of plastic wrap. You may also make this recipe with frozen multigrain waffles.
