Apple Streusel Muffins

Yield: Makes 18 mini muffins
Ingredients:
1/4
cup chopped pecans

tablespoons brown sugar

1
tablespoon all-purpose flour

2
teaspoons butter, melted

1
package (7 ounces) apple-cinnamon muffin mix

1/2
cup shredded peeled apple



 
Preparation:
1.
Preheat oven to 425°F. Coat 18 mini-muffin cups with nonstick cooking spray.

Combine pecans, brown sugar, flour and butter in small bowl.

Prepare muffin mix according to package directions. Stir in apple. Fill each muffin cup 2/3 full. Sprinkle approximately 1 teaspoon pecan mixture on top of each muffin. Bake 12 to 15 minutes or until golden brown. Cool slightly. Serve warm.


Variation For regular-size muffins, grease six 2-1/2-inch muffin cups. Prepare topping and batter as directed. Fill muffin cups 2/3 full. Sprinkle approximately 1 tablespoon pecan mixture on each muffin. Bake 18 to 20 minutes or until golden brown. Yield: Makes 6 regular muffins.
