Bahn Mi, the Delicious Vietnamese Sandwich
Bahn Mi is a Vietnamese sandwich served on a kind of baguette. It normally involves pickles and often some kind of pork. It's a pretty inexpensive but filling dish that you can get at lots of Vietnamese take out places. If you are cutting down on the amount of meat you eat, it's a great way to do it. A little bit of this pork belly goes a long way in flavour. Three of us shared this plate of pork, and we still had a bit left over.
When my daughter came down for dinner she said she wasn't that hungry and was only go to eat the Bahn Mi if it was amazing. Then she tasted a bit of the pork and said, yup, I'll be having that. I loved it because I adore pickles and the mixture of the pickled vegetables and the salty pork was addictive.

INGREDIENTS
| For the pork: | |
| 1 lb | pork belly |
| 2 Tbsp | salt |
| 1 Tbsp | sugar |
| 1 Tbsp | brown sugar |
| 2 Tsp | ginger, peeled and finely chopped |
| 1 1/2 Tsp | five spice powder |
| 1 Tsp | white pepper |
| For the Carrot and Daikon Pickle: | |
| 4 or 5 | large carrots, peeled and cut into julienne |
| 1 | large or a few smaller daikon radishes, peeled and cut into julienne |
| 3‑4 Tbsp | coarse salt |
| 2‑3 Tbsp | sugar |
| Enough vinegar to cover the carrots | |
| For the Pickled Cucumber: | |
| 1 | cucumber, sliced into thin rounds |
| 6 | cloves of garlic, bashed with the dull edge of a knife but left mostly intact |
| fish sauce | |
| rice vinegar | |
PREPARATION:
For the pork:
- Trim any hard fat from the pork belly, and any skin. Mix together the spices and rub them into the pork. Marinate overnight, or for up to 2 full days.
- Preheat the oven to 450 degrees. Scrape the bulk of the rub off the pork, and bake, covered, for 45 minutes.Turn the oven down to 250 degrees and bake for an additional hour. Cool.
- Serve on fresh baguette with carrot and daikon pickle, pickled cucumbers, and generous amounts of fresh cilantro and green onion.
For the Carrot and Daikon Pickle:
- Layer the carrots with the salt and sugar in a bowl or container. Pour vinegar over everything. Leave in the fridge to pickle for at least 1 hour.
For the Pickled Cucumber:
- Layer the cucumber slices in a bowl or container and distribute the garlic among them. Pour equal amounts of fish sauce and rice vinegar to cover the cucumber. Leave in the fridge to pickle for at least 1 hour.
