Baked Salmon

Makes 1 serving

1 (4 ounce) salmon fillet
1 teaspoon fresh lemon juice
1/2 teaspoon Cajun seasoning mix

  1. Preheat oven to 325°F.
  2. Rinse salmon fillet and pat dry. Place fillet in center of large triangle of parchment paper on baking sheet. Sprinkle with lemon juice and seasoning.
  3. Double fold sides and ends of parchment paper to form packet, leaving head space for heat circulation. Bake 20 to 25 minutes. Carefully open packet to allow steam to escape. Salmon is done when it flakes easily with fork.
