Matthew wrote over at TreeHugger that the Baltimore Public School District announced last week it would adopt a Meatless Monday menu for all 80,000 students it serves.

Go Meatless on Mondays

Giving up meat reduces your impact by 70 percent so any reduction is a big deal. Additionally, according to Matthew, in a year of Meatless Mondays you would save about 1 ton of water, enough to fill up the bathtub 22 times per week.

Giving up meat a few times a week isn't as much of a commitment as going completely vegetarian or vegan but it still makes a difference. Josh wrote that giving up meat on Mondays would reduce your saturated fat intake by 15 percent.

A Step Further: A Weekday Vegetarian

Kelly wrote about becoming a weekday vegetarian. It has five times the impact of giving up meat on Mondays and according to Kelly, once you give up meat on the weekdays you need far less when you do eat it. A 3 oz serving will become enough because meat is heavier than vegetables and it makes you feel really full. You'll be equally thrilled at how eating less meat effects the budget. Meat can be pricey.

I've always found vegetarian cooking to be a lot more enjoyable than cooking meat and that's reflected in my recipes. Below are some ideas on Planet Green to get you started.
