INGREDIENTS
| 1 | package (4-serving size) sugar-free cook-and-serve vanilla pudding and pie filling mix |
| 2 | cups low-fat (1%) milk |
| 1 | cup coarsely crushed sugar-free cookies |
| 2 | large ripe bananas, peeled and sliced |
| Mint sprigs (optional) | |
PREPARATION:
- Prepare pudding according to package directions, using low-fat milk; cool 10 minutes, stirring occasionally.
- In each of 4 parfait or wine glasses, layer 2 tablespoons cookie crumbs, 1/4 cup banana slices and 1/4 cup pudding. Repeat layers. Cover; chill at least 1 hour or up to 6 hours before serving. Garnish with mint sprigs, if desired.
Variation
Sugar-free chocolate pudding and pie filling mix can be substituted for vanilla pudding.
