Barbecue Sauce

Yield: Makes about 3 cups
Ingredients:

tablespoons butter

1/2
cup finely chopped onion

1-1/2
cups ketchup

1
cup red currant jelly

1/4
cup apple cider vinegar

1
tablespoon soy sauce

1/4
teaspoon each ground red and black peppers



Preparation:
1.
Melt butter in medium saucepan over medium-high heat. Add onion; cook and stir until softened. Stir in remaining ingredients. Reduce heat to medium-low; simmer 20 minutes, stirring often.


Ovenbaked Jamaican Ribs: Preheat oven to 350°F. Prepare ribs as directed in step 1. Step 3, place ribs in foil-lined roasting pan. Cover with foil; bake 1 hour. Uncover; baste with Barbecue Sauce. Bake, uncovered, 30 minutes more. Continue as directed in step 4.
