Barbecue Sauce
YIELD Makes about 3 cups

INGREDIENTS
| 2 | tablespoons butter |
| 1/2 | cup finely chopped onion |
| 1‑1/2 | cups ketchup |
| 1 | cup red currant jelly |
| 1/4 | cup apple cider vinegar |
| 1 | tablespoon soy sauce |
| 1/4 | teaspoon each ground red and black peppers |
PREPARATION:
- Melt butter in medium saucepan over medium-high heat. Add onion; cook and stir until softened. Stir in remaining ingredients. Reduce heat to medium-low; simmer 20 minutes, stirring often.
Ovenbaked Jamaican Ribs
Preheat oven to 350°F. Prepare ribs as directed in step 1. Step 3, place ribs in foil-lined roasting pan. Cover with foil; bake 1 hour. Uncover; baste with Barbecue Sauce. Bake, uncovered, 30 minutes more. Continue as directed in step 4.
