Basil-Pecan Shells with Smoked Salmon

Salmon makes a fabulous addition to any healthy diet. Its low fat content makes it a perfect protein substitute for fatty cuts of beef.
INGREDIENTS
| 1 | cup fresh basil, stems removed |
| 1/4 | cup freshly grated Parmesan cheese |
| 2 | cloves garlic |
| 1 | tablespoon olive oil |
| 3/4 | cup plain nonfat yogurt |
| 1/3 | cup fat-free (skim) milk |
| 12 | ounces uncooked medium-size pasta shells or conchiglie |
| 8 | ounces smoked salmon, cut into bite-size pieces |
| 4 | tablespoons chopped pecans, toasted |
PREPARATION:
- Place basil, Parmesan, garlic and oil in food processor or blender; process until finely chopped. Set aside.
- Combine yogurt and milk in small bowl; set aside.
- Cook pasta according to package directions, omitting salt. Drain well. Transfer to large serving bowl. Add basil mixture, yogurt mixture, salmon and pecans. Mix well. Garnish as desired. Serve immediately.
