Bayou Cajun Fries
Yield: Makes 2 servings
Ingredients:
1
(6-ounce) baking potato, scrubbed
Vegetable cooking spray
1/2
teaspoon extra virgin olive oil
1/4
teaspoon paprika
1/4
teaspoon Cajun seasoning
1/8
teaspoons salt
Preparation:

Preheat oven 475°F.

To make fries, cut potato in 1/4-inch slices lengthwise, then cut each slice in 1/4-inch wide strips.

Coat a nonstick baking sheet with cooking spray. Place potatoes on sheet; drizzle with oil and sprinkle with paprika. Toss gently to coat.
4.
Arrange potato strips in a single layer with a small amount of space between each strip. Bake 5 minutes, stir and bake 5 minutes more or until tender when pierced with a fork and golden brown.

Remove fries from oven and immediately sprinkle with Cajun seasoning and salt. Toss gently to coat.
