Beef Caesar Salad
Yield: Makes 4 servings
Ingredients:
1
bag (10 ounces) ready-to-use chopped romaine lettuce
2
tablespoons fat-free Caesar salad dressing
1
boneless beef top sirloin steak (about 1 pound)
Nonstick cooking spray
Black pepper
2
slices whole wheat bread, toasted and cut into 32 squares
Preparation:

Toss lettuce and dressing in large bowl. Divide salad greens evenly among 4 plates.

Cut steak lengthwise in half, then crosswise into 1/8-inch-thick strips. Spray 12-inch nonstick skillet with cooking spray and heat over high heat. Add beef; stir-fry 2 minutes or until beef is tender.
3.
Top each plate of lettuce mixture with 1/4 of steak strips. Season with pepper and top with 8 croutons.
Serving Suggestion:
Serve with tomato soup or a meatless vegetable soup such as minestrone.
