We made this for quite a crowd at a recent barbecue. Everyone was ecstatically excited about the summer and any reason to get outside. The weather was a little cool by nightfall but we still supped up every last bit of the chicken. You can use basically any kind of beer can that you like with this. I used a spice rub with salt, pepper, cumin, cayenne, and poultry seasoning but you can really choose whatever combination that you like. The joy of this recipe is that there really aren't very many ingredients here so it?s best to buy the good stuff. Good chicken, good beer, and good organic spices.
Beer Can Chicken
1 whole chicken
2 tbsp organic olive oil
2 tbsp sea salt
1/2 tbsp freshly cracked pepper
4 tbsp spice rub
1 can beer
Method:
1. Rinse chicken inside and out, and pat dry with paper towels.
2. Massage the chicken with oil, salt, pepper, and dry rub.
3. Open a beer can and empty it out 2/3 of the way (by drinking it of course).
4. Place the beer can firmly in the cavity of the chicken.
5. Cook on the grill over medium heat for about an hour and twenty minutes. Let the meat rest for a few minutes before carving it.
Note: Recycle your beer cans as they can be back on the shelves in just 60 days and ready to be used again.
