Berry Parfaits
Yield: Makes 4 (1/2-cup) servings
Ingredients:
1
cup heavy cream
2
tablespoons sugar substitute*
1
teaspoon grated lemon peel
1/2
teaspoon vanilla
3/4
cup blueberries, divided
3/4
cup sliced strawberries, divided
Lemon twist or fresh mint (optional)
Preparation:
1.
Beat cream, sugar substitute, lemon peel and vanilla in large bowl at high speed of electric mixer until thick.

Place 1 tablespoon blueberries and 1 tablespoon strawberries in each of 4 parfait or dessert dishes. Spoon 1/4 cup cream mixture on top of berries. Repeat layers. Garnish with lemon twist or fresh mint leaves, if desired. Refrigerate until ready to serve.
Note:
Frozen, unsweetened strawberries and/or blueberries can be substituted for the fresh berries. Thaw them before using in the recipe.
