Berry Parfaits
YIELD Makes 4 (1/2-cup) servings

INGREDIENTS
| 1 | cup heavy cream |
| 2 | tablespoons sugar substitute* |
| 1 | teaspoon grated lemon peel |
| 1/2 | teaspoon vanilla |
| 3/4 | cup blueberries, divided |
| 3/4 | cup sliced strawberries, divided |
| Lemon twist or fresh mint (optional) | |
PREPARATION:
- Beat cream, sugar substitute, lemon peel and vanilla in large bowl at high speed of electric mixer until thick.
- Place 1 tablespoon blueberries and 1 tablespoon strawberries in each of 4 parfait or dessert dishes. Spoon 1/4 cup cream mixture on top of berries. Repeat layers. Garnish with lemon twist or fresh mint leaves, if desired. Refrigerate until ready to serve.
Note
Frozen, unsweetened strawberries and/or blueberries can be substituted for the fresh berries. Thaw them before using in the recipe.
