Bleu Cheese Walnut Spread with Figs
I'm always in the market for a quick fall appetizer that I can prepare for supper club or other get-togethers during the week. It's no coincidence that figs, bleu cheese, and walnuts are so often found on the same plate. The sweet fig, pungent bleu cheese, and crunchy walnut seem as if they were destined to be paired together.
The most abundantly available fig in my neck of the woods is the Black Mission Fig, a tear-drop shaped fruit with a bright pink flesh. The first crop comes in mid-June, and the second, more abundant crop comes in September and October. But you can find dried figs throughout the year.
Figs are a good source of potassium, a mineral that helps to control blood pressure. Figs are also loaded with fiber which keeps you fuller longer and helps you lose weight.
If I were making this recipe again, I would thinly slice the figs, place on a slice of baguette, and top with a layer of spread.
