Yield: Makes 1 serving
Ingredients:
1/2
cup Date-Nut Granola (recipe follows) or your favorite granola

1/4
cup plain fat-free yogurt or low-fat (1%) cottage cheese

1/2
cup sliced strawberries

1/2
ripe banana, sliced



Preparation:
1.
Place half of granola in parfait glass or glass bowl. Top with half of yogurt. Arrange half of strawberries and the banana over yogurt. Top with remaining granola, yogurt and strawberries.


Vitamin C: The morning meal is a good time to get your daily does of vitamin C. Good sources include orange, grapefruit and tomato juices and strawberries, cantaloupe and kiwifruit.

Date-Nut Granola

Yield: Makes 6 cups
Ingredients:
2
cups uncooked old-fashioned oats

2
cups barley flakes

1
cup sliced almonds

1/3
cup vegetable oil

1/3
cup honey

1
teaspoon vanilla

1
cup chopped dates



Preparation:
1.
Preheat oven to 350°F. Grease 13X9-inch baking pan.

Combine oats, barley flakes and almonds in large bowl; set aside.

3.
Combine oil, honey and vanilla in small bowl. Pour honey mixture over oat mixture; stir well. Pour into prepared pan.

4.
Bake about 25 minutes or until toasted, stirring frequently after the first 10 minutes. Stir in dates while mixture is still hot. Cool. Store tightly covered.
