Broccoli Supreme
Yield: Makes 7 servings
Broccoli is not only low in calories, but high in nutrition as well. One cup has all the vitamin A and twice the vitamin C you need each day.
Ingredients:
2
packages (10 ounces) frozen chopped broccoli
1
cup fat-free reduced-sodium chicken broth
2
tablespoons reduced-fat mayonnaise
2
teaspoons dried minced onion (optional)
Preparation:

Combine broccoli, chicken broth, mayonnaise and onion, if desired in large saucepan. Simmer, covered, stirring occasionally, until broccoli is tender.

Uncover; continue to simmer, stirring occasionally, until liquid has evaporated.
