|2||tablespoons olive oil|
|2||tablespoons lemon juice|
|1/2||teaspoon bottled minced garlic|
|1/2||teaspoon dried oregano leaves|
|1/8||teaspoon ground red pepper|
|1/2||pound medium shrimp, peeled|
|1||red bell pepper, cut into squares|
|1||medium zucchini, cut into 1/2-inch slices|
- Preheat broiler. Whisk together oil, lemon juice, garlic, salt, oregano and ground red pepper in medium bowl. Add shrimp, bell pepper and zucchini; stir until well coated.
- Alternately thread shrimp, bell pepper and zucchini onto skewers. Place on rack of broiler pan. Broil 4 inches from heat 2 minutes per side or until shrimp turn pink and opaque.
