Broiled Shrimp Kabobs

Ingredients:

tablespoons olive oil

tablespoons lemon juice
1/2
teaspoon bottled minced garlic
1/2
teaspoon salt
1/2
teaspoon dried oregano leaves
1/8
teaspoon ground red pepper
1/2
pound medium shrimp, peeled
1
red bell pepper, cut into squares
1
medium zucchini, cut into 1/2-inch slices
Preparation:

Preheat broiler. Whisk together oil, lemon juice, garlic, salt, oregano and ground red pepper in medium bowl. Add shrimp, bell pepper and zucchini; stir until well coated.

Alternately thread shrimp, bell pepper and zucchini onto skewers. Place on rack of broiler pan. Broil 4 inches from heat 2 minutes per side or until shrimp turn pink and opaque.
