Broiled Zucchini Halves

INGREDIENTS
| 1/2 | cup (2 ounces) shredded mozzarella cheese |
| 2 | tablespoons diced pimiento |
| 2 | tablespoons chopped ripe olives |
| 4 | small zucchini (about 1 pound total), sliced lengthwise |
| 1 | tablespoon olive oil |
PREPARATION:
- Preheat broiler; place oven rack 6 inches below heat source. Combine cheese, pimiento and olives in small bowl; set aside.
- Brush both sides of zucchini halves with oil; arrange on broiler pan lined with foil. Broil 5 minutes or until fork-tender.
- Spoon about 2 tablespoons cheese mixture along each zucchini half. Broil until cheese melts and browns. Serve immediately.
