INGREDIENTS
| 1 | cup cooked soba noodles, drained and chopped well |
| 1/3 | cup chopped cooked bacon |
| 1/3 | cup minced parsley |
| 1/4 | cup minced red bell pepper |
| 1 | teaspoon minced garlic |
| 1 | egg white, beaten until foamy |
| 1/2 | teaspoon black pepper |
| Nonstick cooking spray | |
PREPARATION:
- Mix noodles with bacon, parsley, bell pepper, garlic and egg white. Stir well. Add ground black pepper and stir again. Egg white should be partially absorbed.
- Spray a large skillet with nonstick cooking spray and place over medium-high heat. When pan is hot, use 1/4 cup measure to scoop noodle mixture onto hot skillet. Cook until noodles are browned on edges, about 3 to 4 minutes. Spray each noodle cluster with nonstick spray and flip to cook on other side. Cook about 3 to 4 minutes. Serve warm.
