Cajun Grilled Shrimp with Rotini and Roasted Red Pepper Sauce
Yield: Makes 4 servings
Not only is shrimp low in calories, but it is also an excellent source of protein, zinc, iron and copper.
Ingredients:

ounces uncooked rotini pasta

2
jars (7 ounces each) roasted peppers packed in water, well drained

2
cloves garlic

tablespoons olive oil

1/2
teaspoon salt

1/4
cup chicken broth

1/8
teaspoon ground red pepper

Nonstick cooking spray

ounces medium shrimp, peeled and deveined

1-1/2
teaspoons chili powder

1-1/2
teaspoons lemon pepper

3/4
teaspoon paprika



 
Preparation:
1.
Cook pasta according to package directions, omitting salt. Drain; set aside.

Meanwhile, place peppers, garlic, oil, salt, chicken broth and ground red pepper in food processor or blender; process until smooth. Set aside.

3.
Spray large nonstick skillet with cooking spray. Heat over medium heat until hot. Add shrimp, chili powder, lemon pepper and paprika; cook and stir 8 minutes or until shrimp are opaque. Add roasted pepper mixture; heat thoroughly. Do not boil. Serve over pasta. Garnish with chopped parsley, if desired.
