Caramel Popcorn
Yield: Makes 6 (1-cup) servings
Nothing tastes better when watching your favorite movie than caramel popcorn. And you can feel better about snacking because it's so low in fat and calories.
Ingredients:

tablespoon margarine
1
cup packed light brown sugar
1/4
cup water
6
cups air-popped popcorn
Preparation:

Melt margarine in medium saucepan over medium heat. Add brown sugar and water; stir until sugar is dissolved. Bring to a boil; cover and cook 3 minutes.

Uncover pan; continue cooking mixture to soft-crack stage (275°F on candy thermometer). Do not overcook. Pour hot mixture over popcorn; stir with wooden spoon.
3.
Spread popcorn in single layer on sheet of foil to cool completely. Break apart.
