Ingredients

Pork butt
Salt
Pepper
Tex Mex
Coca-Cola
Caribbean Marinade
Ham Stock
Brown Sugar
Sweet and spicy rub
Paprika
Garlic
Salt and black pepper
Cayenne

Preparation

  1. Trim excess fat caps. Remove bone from pork butt, butterfly open.
  2. Inject then marinade 2 hours.
  3. Spray with canola oil and Inject. Apply sweet & spicy rub. Let sit for 4 hours.
  4. Baste pork in juices collected from pan.
  5. Brush outside of pork butt with sauce shortly before serving.
