I love cauliflower, but my husband isn't super crazy about it. I'm always looking for ways to jazz it up for him which usually involves some form of Indian cooking. I got this idea for a cauliflower "steak" from Bon Appetit, but honestly, the recipe looked a little fussy. They suggested cutting a steak-like section from the cauliflower, then cooking the rest in milk and pureeing, then baking it, which seemed altogether too much like work.
I just took the idea of steak and did something different. Rather than cutting the cauliflower into florets as is customary, slice one inch thick slices so that you get a cross section that looks a bit like a tree. Then I pan fried it in a bit of olive oil for about 5 minutes, turned it over and cooked it for another couple of minutes until it was browned on both sides. I put it on a serving platter and drizzled it with capers and voila! A fantastic, nutty tasting cauliflower dish that cooked in minutes and that my husband loved.
