Cheesy Pork and Potatoes

INGREDIENTS
| 1/2 | pound ground pork, cooked and crumbled |
| 1/2 | cup finely crushed saltine crackers |
| 1/3 | cup barbecue sauce |
| 1 | egg |
| 3 | tablespoons butter or margarine |
| 1 | tablespoon vegetable oil |
| 4 | potatoes, peeled and thinly sliced |
| 1 | onion, thinly sliced |
| 1 | cup shredded mozzarella cheese |
| 2/3 | cup evaporated milk |
| 1 | teaspoon salt |
| 1/4 | teaspoon paprika |
| 1/8 | teaspoon black pepper |
| Chopped fresh parsley (optional) | |
PREPARATION:
Slow Cooker Directions
- Combine pork, crackers, barbecue sauce and egg in large bowl; shape mixture into 6 patties.
- Heat butter and oil in medium skillet. Cook and stir potatoes and onion until lightly browned; drain. Place in slow cooker.
- Combine cheese, milk, salt, paprika and pepper in small bowl. Pour into slow cooker. Layer pork patties on top.
- Cover; cook on LOW 3 to 5 hours. Garnish with parsley. Serve with vegetable side, if desired.
