INGREDIENTS

1‑1/4 cups all-purpose flour
3/4 cup cornmeal
2 medium green onions, thinly sliced
4 teaspoons sugar
2 teaspoons baking powder
1 teaspoon Italian seasoning
1/4 teaspoon salt
1 cup milk
1/4 cup vegetable oil
1 egg
1 cup (4 ounces) shredded Cheddar cheese
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped red bell pepper
2 slices crisp-cooked bacon, crumbled

PREPARATION:

  1. Preheat oven to 400°F. Grease 11X7-inch baking dish.
  2. Combine flour, cornmeal, green onions, sugar, baking powder, Italian seasoning and salt in large bowl; mix well. Combine milk, oil and egg in small bowl. Add to cornmeal mixture; mix just until moistened. Spread evenly in prepared dish. Combine cheese, bell peppers and bacon in medium bowl. Sprinkle evenly over cornmeal mixture.
  3. Bake 25 to 30 minutes or until wooden toothpick inserted into center comes out clean. Let stand 10 minutes before cutting.
Note
Also great as a side dish to fish, chicken or pork. Just cut into 8 squares.
