Cherry Cheese Sandwich Cookies
Yield: Makes 10 servings
Ingredients:
1
package (8 ounces) reduced-fat cream cheese, softened

1/4
cup cherry preserves

1/4
cup powdered sugar, sifted

1/4
teaspoon vanilla or almond extract

tablespoons chopped dried cherries (optional)

vanilla cookies



Preparation:
1.
Mash softened cream cheese in pie plate with fork. Mix in preserves, sugar, vanilla or almond extract, and dried cherries, if desired, into cream cheese. Mix until well blended; chill 30 minutes.

2.
Spoon about 2 teaspoons cream cheese mixture onto flat side of vanilla cookie. Top with another cookie. Repeat until all cookies are filled. Serve immediately.


Tip: Try strawberry, raspberry or other preserve flavors to suit your child's tastes.
