Cherry Cheese Sandwich Cookies

INGREDIENTS
| 1 | package (8 ounces) reduced-fat cream cheese, softened |
| 1/4 | cup cherry preserves |
| 1/4 | cup powdered sugar, sifted |
| 1/4 | teaspoon vanilla or almond extract |
| 2 | tablespoons chopped dried cherries (optional) |
| 40 | vanilla cookies |
PREPARATION:
- Mash softened cream cheese in pie plate with fork. Mix in preserves, sugar, vanilla or almond extract, and dried cherries, if desired, into cream cheese. Mix until well blended; chill 30 minutes.
- Spoon about 2 teaspoons cream cheese mixture onto flat side of vanilla cookie. Top with another cookie. Repeat until all cookies are filled. Serve immediately.
Tip
Try strawberry, raspberry or other preserve flavors to suit your child's tastes.
