Salads are a mixture of lettuces, vegetables and sometimes even meats and dairy products. Most have an accompanying dressing to keep it moist and even more toppings to add flavor.

Chicken Caesar Salad

Yield: Makes 2 servings
Ingredients:
6
ounces chicken tenders

1/4
cup plus 1 tablespoon Caesar salad dressing, divided

Black pepper

4
cups (about 5 ounces) prepared Italian salad mix (romaine and radicchio)

1/2
cup croutons, divided

2
tablespoons grated Parmesan cheese



Preparation:
1.
Cut chicken tenders in half lengthwise and crosswise. Heat 1 tablespoon salad dressing in large nonstick skillet. Add chicken; cook and stir over medium heat 3 to 4 minutes or until chicken is cooked through. Remove chicken from skillet; season with pepper; let cool.

2.
Combine salad mix, 1/4 cup croutons, remaining 1/4 cup salad dressing and Parmesan cheese in serving bowl; toss to coat. Top with chicken and remaining 1/4 cup croutons.
