Chicken Caesar Salad

INGREDIENTS

6 ounces chicken tenders
1/4 cup plus 1 tablespoon Caesar salad dressing, divided
Black pepper
4 cups (about 5 ounces) prepared Italian salad mix (romaine and radicchio)
1/2 cup croutons, divided
2 tablespoons grated Parmesan cheese

PREPARATION:

  1. Cut chicken tenders in half lengthwise and crosswise. Heat 1 tablespoon salad dressing in large nonstick skillet. Add chicken; cook and stir over medium heat 3 to 4 minutes or until chicken is cooked through. Remove chicken from skillet; season with pepper; let cool.
  2. Combine salad mix, 1/4 cup croutons, remaining 1/4 cup salad dressing and Parmesan cheese in serving bowl; toss to coat. Top with chicken and remaining 1/4 cup croutons.
