Makes 2 servings
|1||cup uncooked instant rice|
|2||sheets (18X12 inches) heavy-duty foil, lightly sprayed with nonstick cooking spray|
|1-1/2||cups broccoli florets|
|1/4||cup chicken broth|
|2/3||cup Alfredo pasta sauce|
|2||tablespoons grated Parmesan cheese|
- Preheat oven to 450°F.
- Place 1/2 cup rice in center of one sheet of foil. Place 4 chicken tenders on foil to enclose rice. Arrange half of broccoli on chicken. Pour 2 tablespoons chicken broth over rice. Top with two ice cubes.
- Pour 1/3 cup sauce over chicken and broccoli. Sprinkle with 1 tablespoon cheese.
- Double fold sides and ends of foil to seal packet, leaving head space for heat circulation. Repeat with remaining rice, chicken, broccoli, broth, ice cubes, sauce and cheese. Place packets on baking sheet.
- Bake 15 minutes or until chicken is no longer pink in center. Remove from oven. Let stand 5 minutes. Open packets and transfer contents to serving plates.
