These chicken patties are also good as an entrée with vegetable accompaniments.
INGREDIENTS
| Lemon-Mustard Sauce (page 59) | |
| 1 | pound boneless skinless chicken breasts, ground |
| 1/4 | cup finely chopped onion |
| 1/4 | cup finely chopped red or green bell pepper |
| 1 | clove garlic, minced |
| 2 | tablespoons dry bread crumbs |
| 1/4 | teaspoon salt |
| 1/4 | teaspoon black pepper |
| Nonstick cooking spray | |
| 4 | lettuce leaves |
| 4 | rounds pita bread or whole-grain bread, toasted |
PREPARATION:
- Prepare Lemon-Mustard Sauce.
- Combine chicken, onion, bell pepper, garlic, bread crumbs, salt and pepper in medium bowl; shape into 4 patties about 4 inches in diameter and 1/2 inch thick.
- Spray large nonstick skillet with cooking spray; heat over medium heat. Add patties; cook 4 minutes. Turn patties; cook 4 more minutes or until no longer pink in center and internal thermometer inserted into center of chicken reads 165°F.
- Place lettuce in pita; top with chicken and sauce.
