Spicy Pistachio Chicken
COOK TIME: 40 minutes
PREP TIME: 10 minutes
Yield: Makes 4 servings
Ingredients:
4
boneless skinless chicken breasts
4
sheets (18X12 inches) heavy duty foil, lightly sprayed with nonstick cooking spray
1
tablespoon olive oil
1/4
teaspoon paprika
1/4
cup finely chopped pistachio nuts
2
tablespoons finely chopped green onion
Preparation:
1.
Preheat oven to 375°F. Place each chicken breast on sheet of foil. Brush chicken with oil; sprinkle with paprika. Double fold sides and ends of foil to seal packets, leaving head space for heat circulation. Place packets on baking sheet.

Bake packets 25 minutes. Remove from oven. Carefully open one end of foil packet to allow steam to escape. Open foil completely; sprinkle chicken with nuts and green onions. Leave foil open and return to oven. Bake about 5 minutes or chicken is no longer pink in center (170°F).

Transfer contents of packets to serving plates. Garnish with lemon slices, if desired.
4.
Refrigerate leftovers immediately.
