Spicy Pistachio Chicken

Makes 4 servings
|4||boneless skinless chicken breasts|
|4||sheets (18X12 inches) heavy duty foil, lightly sprayed with nonstick cooking spray|
|1||tablespoon olive oil|
|1/4||cup finely chopped pistachio nuts|
|2||tablespoons finely chopped green onion|
- Preheat oven to 375°F. Place each chicken breast on sheet of foil. Brush chicken with oil; sprinkle with paprika. Double fold sides and ends of foil to seal packets, leaving head space for heat circulation. Place packets on baking sheet.
- Bake packets 25 minutes. Remove from oven. Carefully open one end of foil packet to allow steam to escape. Open foil completely; sprinkle chicken with nuts and green onions. Leave foil open and return to oven. Bake about 5 minutes or chicken is no longer pink in center (170°F).
- Transfer contents of packets to serving plates. Garnish with lemon slices, if desired.
- Refrigerate leftovers immediately.
