Organic Mocha Cupcakes
A groom's cake is a great opportunity to add some personalty and style to your wedding. Wedding cakes tend to be a bit more traditional than the groom's cake. Try these chocolate cupcakes, which have a really distinctive flavor triggered by the coffee and liqueur. The combination really adds a depth to the flavor of the cupcakes and the icing.

INGREDIENTS
| Organic Mocha Cupcakes: | |
| 1 1/3 cups | organic all-purpose flour |
| 1/3 cup | unsweetened organic cocoa powder (Use Green and Black's or Navitas Naturals here) |
| 1 tsp | baking powder |
| ½ tsp | baking soda |
| ¼ tsp | salt |
| ½ cup | whole organic milk |
| ½ cup | strong brewed organic coffee, at room temperature |
| ½ cup | 1 stick unsalted local butter, softened |
| ½ cup | organic granulated sugar |
| ½ cup | organic firmly packed light brown sugar |
| 1 | local large egg, lightly beaten |
| Chocolate Liqueur Frosting: | |
| ½ stick | local butter, softened |
| 1 tsp | vanilla extract |
| 1/3 cup | organic cocoa powder |
| 1 ¼ cup | organic confectioner's sugar |
| ¼ cup | chocolate liqueur |
PREPARATION:
Organic Mocha Cupcakes:
- Preheat oven to 350 degrees. Make sure to use nonstick muffin tins so that you don't have to line the tins.
- Sift the flour, cocoa powder, baking powder, baking soda, and salt into a bowl.
- In a measuring cup, combine the milk and brewed coffee.
- In another bowl beat the butter, sugar, brown sugar, and egg until fluffy. This usually takes about 2 minutes. Add the milk and brewed coffee combination.
- Add flour very gradually so that it mixes in completely.
- Fill the muffin tins about 3/4 of the way full.
- Bake for 15 minutes and then check with a toothpick.
Chocolate Liqueur Frosting:
- Cream the butter and vanilla extract until fluffy.
- Sift together the cocoa powder and sugar in a bowl.
- Combine the two and mix completely. Add the liqueur.
- Spread atop cooled cupcakes.
