Chocolate-Mint Brownies

Yield: Makes 16 brownies
Ingredients:

cup butter
2
squares (1 ounce each) unsweetened chocolate
2
eggs
1
cup packed light brown sugar
1/2
cup all-purpose flour
1
teaspoon vanilla
Mint Frosting (recipe follows)
Chocolate Glaze (recipe follows)
Preparation:

Preheat oven to 350°F. Grease and flour 8-inch square pan. Melt butter and chocolate in small heavy saucepan over low heat; stir to blend. Remove from heat; cool. Beat eggs in medium bowl until light. Add brown sugar, beating well. Blend in chocolate mixture. Stir in flour and vanilla. Spread batter evenly in prepared pan. Bake 30 minutes or until firm in center. Cool in pan on wire rack. Prepare Mint Frosting. Spread over top; refrigerate until firm. Prepare Chocolate Glaze. Drizzle over frosting; refrigerate until firm. Cut into 2-inch squares.
Mint Frosting
Ingredients:

cups powdered sugar

to 3 tablespoons light cream or milk
1
tablespoon butter, softened
1/2
teaspoon peppermint extract
1
to 2 drops green food coloring
1/2
cup semisweet chocolate chips
2
tablespoons butter or margarine
Preparation:

Blend powdered sugar, 2 tablespoons cream and the butter in small bowl until smooth. Add more cream, if necessary, to make spreading consistency. Blend in peppermint extract and enough green food coloring to make a pale mint-green color.
Chocolate Glaze:
Place 1/2 cup semisweet chocolate chips and 2 tablespoons butter or margarine in small bowl over hot water. Stir until metled and smooth.
