Chocolate-Orange Bavarian Torte
Yield: Makes 10 to 12 servings
Ingredients:

package (about 9 ounces) chocolate cake mix
2
tablespoons vegetable oil
1/2
teaspoon orange extract
1/2
teaspoon almond extract
Orange Bavarian (recipe follows)
Chocolate Glaze (recipe follows)
Preparation:

Preheat oven to 350°F. Grease and flour one 9-inch round baking pan.

Combine cake mix, water, oil, eggs and extracts in large bowl. Beat at low speed of electric mixer until blended. Beat at medium speed 2 to 3 minutes or until well blended. Pour into prepared pan.
3.
Bake 30 to 35 minutes or until toothpick inserted into center comes out clean. Cool in pan on wire rack 10 minutes. Remove cake from pan; cool completely.
4.
Prepare Orange Bavarian. Place cake layer on serving plate; invert bavarian on top of cake.
5.
Prepare Chocolate Glaze. Pour glaze over torte, allowing it to run down sides.
Orange Bavarian
Ingredients:

envelope unflavored gelatin
1/2
cup plus 2 tablespoons sugar, divided
2
eggs, separated and at room temperature
1/2
cup frozen orange juice concentrate, thawed and undiluted
1
tablespoon grated orange peel
Preparation:

Grease 6-cup bundt pan; set aside.

Pour milk into medium saucepan. Sprinkle gelatin over milk; let stand several minutes to soften. Add 1/2 cup sugar and 2 egg yolks to gelatin mixture; mix well. Cook over medium-low heat, stirring constantly, until mixture thickens slightly. Do not boil. Remove from heat; set aside.

Combine orange juice concentrate, orange peel and vanilla in small bowl; mix well. Add orange juice mixture to gelatin mixture. Cool mixture in refrigerator, stirring occasionally, until it begins to set.

Meanwhile, beat egg whites in small bowl until soft peaks form. Add remaining 2 tablespoons sugar and beat until stiff peaks form. Gently fold into orange-gelatin mixture. Beat whipping cream in chilled bowl until stiff peaks form. Gently fold into orange-gelatin mixture. Pour into prepared pan; refrigerate until set.
5.
Dip bottom of pan briefly in warm water. Place serving plate on top of pan. Invert pan and plate and shake to loosen gelatin. Gently remove pan from bavarian.
Chocolate Glaze
Ingredients:

tablespoons light corn syrup
1
cup semisweet chocolate baking chips
Preparation:
1.
Combine butter, corn syrup and water in small saucepan. Heat over medium-high heat until mixture begins to boil. Remove from heat and stir in chocolate chips until melted. Blend until smooth; cool to room temperature.
