Some might cock their head in surprise to learn of a thriving vegan community in Scranton, PA, but not Christian Pilosi. Born and raised in Old Forge, PA, a small town just outside of Scranton, Pilosi worked in the insurance industry for years, always keeping in the back of his mind the thought of "starting my own vegan related business one day." In 2007, he got busy. "I locked on to the idea of a vegan lunch eatery and I knew I wanted it to be in the downtown area of Scranton," he explains. "There are several universities and colleges in the area and I knew that would be a good starting demographic."
eden-a vegan café opened it's doors on November 7, 2008 and as it approaches its two-year anniversary, I talked with Christian about this life, his work, and his passions.
