Cilantro Pesto
YIELD Makes 4 servings (1 tablespoon each)

INGREDIENTS
| 1 | cup loosely packed fresh cilantro leaves |
| 1 | clove garlic, minced |
| 2 | tablespoons grated Parmesan cheese |
| 1 | tablespoon pine nuts or slivered almonds |
| 1 | tablespoon olive oil |
| 1 | tablespoon lemon juice |
| 1/4 | teaspoon fennel seeds |
PREPARATION:
- Combine all ingredients in food processor or blender; process until almost smooth, adding 1 teaspoon water at a time, if necessary, until mixture is medium to thick consistency.
