Cinnamon Cereal Crispies
Yield: Makes about 5 dozen cookies
Ingredients:
1/2
cup granulated sugar

2
teaspoons ground cinnamon, divided

1
package (18-1/4 ounces) white or yellow cake mix with pudding in the mix

1/2
cup water

1/3
cup vegetable oil

1
egg

2
cups crisp rice cereal

1
cup cornflakes

1
cup raisins

1
cup chopped nuts (optional)



Preparation:
1.
Preheat oven to 350°F. Lightly spray cookie sheets with nonstick cooking spray. Combine sugar and 1 teaspoon cinnamon in small bowl.

2.
Beat cake mix, water, oil, egg and remaining 1 teaspoon cinnamon in large bowl with electric mixer at medium speed 1 minute. Gently stir in rice cereal, cornflakes, raisins and nuts, if desired until well blended.

3.
Drop batter by rounded tablespoonfuls 2 inches apart onto prepared cookie sheets. Sprinkle lightly with one half of cinnamon-sugar mixture.

4.
Bake about 15 minutes or until lightly browned. Sprinkle cookies with remaining cinnamon-sugar mixture after baking; transfer to wire racks to cool completely.
