Coconut Balls

YIELD Makes 30 candies

INGREDIENTS

1/2 cup golden raisins, chopped
1/2 cup pitted prunes or dates, chopped
1/2 cup graham cracker crumbs
1/2 cup powdered sugar
1 tablespoon grated orange peel
1/2 cup sweetened condensed milk
1 cup shredded coconut

PREPARATION:

  1. Combine raisins, prunes, graham cracker crumbs, sugar and orange peel in medium bowl. Stir in condensed milk. Refrigerate until firm enough to shape into balls, about 30 minutes.
  2. Place coconut in shallow bowl.
  3. For each candy, shape scant tablespoonful fruit mixture into 1-inch ball. Roll in coconut.
  4. Store in refrigerator.
