INGREDIENTS

3 cups water
2 cups long-grain white rice
1 cup unsweetened coconut milk
2 tablespoons sugar
2 teaspoons grated fresh ginger

PREPARATION:

  1. Bring water, rice, coconut milk, sugar and ginger to a boil in medium saucepan over high heat. Reduce heat to low; cover and simmer 25 minutes or until liquid is absorbed. Fluff rice with fork.
