Coconut Ginger Rice

INGREDIENTS
| 3 | cups water |
| 2 | cups long-grain white rice |
| 1 | cup unsweetened coconut milk |
| 2 | tablespoons sugar |
| 2 | teaspoons grated fresh ginger |
PREPARATION:
- Bring water, rice, coconut milk, sugar and ginger to a boil in medium saucepan over high heat. Reduce heat to low; cover and simmer 25 minutes or until liquid is absorbed. Fluff rice with fork.
