Collard Greens

Ingredients

4 bunches collard greens, stemmed and washed and torn into bite-size pieces
2 cups water
1/2 medium red bell pepper, cored, seeded and cut into strips
1/3 medium green bell pepper, cored, seeded and cut into strips
1/4 cup olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper

Preparation

  1. Place all ingredients in large saucepan; bring to a boil. Reduce heat, simmer, 1 to 1-1/2 hours or until tender.
