Corn & Zucchini Medley
YIELD Makes 4 servings
|3/4||pound 90% lean ground beef|
|1||(10-ounce) package frozen corn, thawed|
|2||small zucchini (about 1/2 pound), chopped|
|1||large tomato, chopped|
|1/2||cup chopped onion|
|1||tablespoon chopped fresh basil or 1 teaspoon dried basil|
|1‑1/2||teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme leaves|
|Salt and black pepper|
- Brown ground beef in large skillet. Drain. Reduce heat to medium-low. Stir in corn, zucchini, tomato, onion, basil and thyme; cover. Cook 10 minutes or until zucchini is tender. Season with salt and pepper to taste.
Substitute 1-1/2 cups fresh corn kernels for frozen corn, if desired.
