Corn & Zucchini Medley
Yield: Makes 4 servings
Ingredients:
3/4
pound 90% lean ground beef
1
(10-ounce) package frozen corn, thawed
2
small zucchini (about 1/2 pound), chopped
1
large tomato, chopped
1/2
cup chopped onion
1
tablespoon chopped fresh basil or 1 teaspoon dried basil
1-1/2
teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme leaves
Salt and black pepper
Preparation:

Brown ground beef in large skillet. Drain. Reduce heat to medium-low. Stir in corn, zucchini, tomato, onion, basil and thyme; cover. Cook 10 minutes or until zucchini is tender. Season with salt and pepper to taste.
Tip:
Substitute 1-1/2 cups fresh corn kernels for frozen corn, if desired.
