Corn & Zucchini Medley

INGREDIENTS
| 3/4 | pound 90% lean ground beef |
| 1 | (10-ounce) package frozen corn, thawed |
| 2 | small zucchini (about 1/2 pound), chopped |
| 1 | large tomato, chopped |
| 1/2 | cup chopped onion |
| 1 | tablespoon chopped fresh basil or 1 teaspoon dried basil |
| 1‑1/2 | teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme leaves |
| Salt and black pepper | |
PREPARATION:
- Brown ground beef in large skillet. Drain. Reduce heat to medium-low. Stir in corn, zucchini, tomato, onion, basil and thyme; cover. Cook 10 minutes or until zucchini is tender. Season with salt and pepper to taste.
Tip
Substitute 1-1/2 cups fresh corn kernels for frozen corn, if desired.
