Select fresh green beans that are firm, smooth and brightly colored. They should be crisp enough to snap when bent in half. Avoid those that are discolored, spotted or leathery looking.
INGREDIENTS
| 2 | teaspoons olive oil |
| 1/4 | cup minced onion |
| 1 | clove garlic, minced |
| 1 | pound fresh green beans, rinsed and drained |
| 1 | cup chopped fresh tomatoes |

| 1 | tablespoon chopped fresh marjoram |
| 2 | teaspoons chopped fresh basil |
| 1/8 | teaspoon black pepper |
| 1/4 | cup herbed croutons |
