Couscous and Apricots

INGREDIENTS
| 1 | can (5-1/2 ounces) apricot nectar or apple juice |
| 1/2 | cup thinly sliced celery |
| 1/2 | cup water |
| 1/4 | cup chopped dried apricots or apples |
| 1/4 | teaspoon ground allspice |
| 1/8 | teaspoon salt |
| 1/3 | cup couscous |
| 1/3 | cup quick-cooking brown rice |
| 1/4 | cup coarsely chopped walnuts |
PREPARATION:
- Combine apricot nectar, celery, water, apricots, allspice and salt in large saucepan. Bring to a boil over high heat. Remove from heat. Stir in couscous, brown rice and walnuts. Cover; let stand 5 minutes until liquid is absorbed. Fluff couscous mixture with fork.
