Creamed Spinach
INGREDIENTS
| 1 | package (10 ounces) frozen chopped spinach, thawed |
| 2 | tablespoons butter or margarine |
| 2 | tablespoons all-purpose flour |
| 1 | cup milk |
| 1/4 | teaspoon salt |
| Dash black pepper | |
| 1 | tablespoon grated Parmesan cheese (optional) |
| 3/4 | cup all-purpose flour |
| 3 | eggs |
| 1 | cup milk |
| 3 | tablespoons butter or margarine, melted |
| 1/2 | teaspoon salt |
| About 2 tablespoons vegetable oil | |
PREPARATION:
- Press spinach to remove all moisture; set aside. Melt butter in medium saucepan over medium heat. Stir in flour; cook until bubbly.
- Slowly stir in milk. Cook until thickened. Add spinach; continue cooking over low heat, stirring constantly, about 5 minutes or until spinach is tender. Season with salt, pepper and cheese.
