INGREDIENTS
| 4 | Ounce soft goat cheese, crumbled |
| 1 | Cup loosely packed fresh basil leaves, chopped |
| 1 | can (28 oz each) Hunt's® Whole Peeled Tomatoes, drained |
| 2 | Tablespoon fresh lemon juice |
| 2 | Tablespoon extra virgin olive oil |
| 6 | *serving Bibb lettuce leaves, optional |
| 1/4 | Teaspoon kosher salt |
| 3 | Tablespoon finely chopped shallots |
| 1/4 | Teaspoon ground black pepper |
PREPARATION:
- Place drained tomatoes in large bowl; cut into large pieces with kitchen scissors. Add cheese, basil, shallots, oil, lemon juice, salt and pepper. Toss gently.
- Cover; let stand at room temperature 30 minutes. Stir gently. Serve at room temperature as a side salad or in lettuce leaves, if desired.
