Tomatoes, fresh basil and goat cheese combine to create a creamy dressing for a unique side salad Recipe developed by George Duran for Hunt's

INGREDIENTS

4 Ounce soft goat cheese, crumbled
1 Cup loosely packed fresh basil leaves, chopped
1 can (28 oz each) Hunt's® Whole Peeled Tomatoes, drained
2 Tablespoon fresh lemon juice
2 Tablespoon extra virgin olive oil
6 *serving Bibb lettuce leaves, optional
1/4 Teaspoon kosher salt
3 Tablespoon finely chopped shallots
1/4 Teaspoon ground black pepper

PREPARATION:

  1. Place drained tomatoes in large bowl; cut into large pieces with kitchen scissors. Add cheese, basil, shallots, oil, lemon juice, salt and pepper. Toss gently.
  2. Cover; let stand at room temperature 30 minutes. Stir gently. Serve at room temperature as a side salad or in lettuce leaves, if desired.
