Crispy Tuna Fritters

INGREDIENTS
| 1 | cup yellow corn bread mix |
| 1/4 | cup minced onion |
| 2 | tablespoons minced pimiento |
| 1/4 | teaspoon salt |
| 1/8 | teaspoon ground red pepper |
| 1/8 | teaspoon black pepper |
| 3/4 | cup boiling water |
| 1 | can (9 ounces) tuna packed in water, drained |
| Vegetable oil | |
PREPARATION:
- Combine cornmeal mix, onion, pimiento, salt, red pepper and black pepper in small bowl.
- Slowly stir water into cornmeal mixture. (Mixture will be thick.) Stir in tuna.
- Pour oil into large skillet to depth of 1/2 inch; heat over medium heat until hot (about 375°F on deep-fry thermometer).
- Drop cornmeal mixture by tablespoonfuls into hot oil. Fry over medium heat 1 minute per side or until golden brown. Drain on paper towels.
Serving Suggestion
Serve fritters with cucumber ranch salad dressing or tartar sauce.
