INGREDIENTS

1 medium cucumber, coarsely chopped
1/2 cup coarsely chopped onion
1/2 cup loosely packed cilantro leaves
1 clove garlic, minced
1 tablespoon diced jalapeño or green chili pepper*
1/2 cup seasoned rice vinegar
*Jalapeño and chili peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.

PREPARATION:

  1. Place cucumber, onion, cilantro, garlic and jalapeño pepper in food processor container; process 1 minute. Spoon mixture into small bowl; stir in vinegar.
