Deep South Ham and Redeye Gravy

INGREDIENTS
| 1 | tablespoon butter |
| 1 | ham steak (about 1-1/3 pounds) |
| 1 | cup strong coffee |
| 3/4 | teaspoon sugar |
| 1/4 | teaspoon hot pepper sauce |
PREPARATION:
- Heat large skillet over medium-high heat until hot. Add butter; tilt skillet to coat bottom. Add ham steak; cook 3 minutes. Turn; cook 2 minutes longer or until lightly browned. Remove ham to serving platter; keep warm.
- Add coffee, sugar and pepper sauce to same skillet. Bring to a boil over high heat; boil 2 to 3 minutes or until liquid is reduced to 1/4 cup, scraping up any brown bits. Serve gravy over ham.
Serving Suggestion
Serve ham steak with sautéed greens and poached eggs.
