Down-Home Pork and Beans
Yield: Makes 6 servings
Ingredients:
Nonstick cooking spray

cup sliced onion

cup diced green bell pepper

cloves garlic, minced

can (15 ounces) white beans, rinsed and drained

can (10-3/4 ounces) reduced-fat condensed tomato soup, undiluted

ounces pork tenderloin, trimmed and cubed

cup packed brown sugar
1/4
cup barbecue sauce
1/2
teaspoon salt
Preparation:

Spray large saucepan with cooking spray. Add onion, bell pepper and garlic; cook and stir until tender. Add beans, soup, pork, brown sugar, barbecue sauce and salt. Cover; simmer 1 hour.
